AREPAS
Arepas are a very famous dish
in all parts of the world, and are a legacy of Venezuela from pre-Columbian
times. They are also quite typical in various parts of Colombia, although
different variations can be found, especially in the type of corn, since it is
sometimes more yellow and sometimes white.
For its preparation,
pre-cooked flours are sold that are easy to prepare and can be filled with a
large number of ingredients, from meat, cheese and ham, to grains, sausages and
avocado. They are perfect for breakfast and dinner and are accompanied by hot
or cold drinks.
How to make arepas?
For the arepas:
Spread the oil in a large skillet and put it in the
kitchen over medium high heat. Place the water and a pinch of salt in a bowl;
Gradually add flour and stir with a spoon. Wait about three minutes until the
dough takes a little consistency.
Types of arepas in colombia
1. Arepa de Choclo
There are those who find the similarity in these
arepas with pancakes. That might be the easiest way to explain your
preparation. The difference is that in this recipe it is made with tender corn
kernels. In addition, curd or peasant cheese is added, it can be sweetened with
sugar or panela. And they are cooked in a pan.
2. Arepa paisa
Medellín is one of the places where arepas are eaten
the most in Colombia. This particular arepa is very simple, it is done
intentionally to accompany everything you want. It is made with threshed white
corn, it must be very thin and toasted. It does not have any type of filling
and is perfect to accompany meals such as chorizo.
3. Arepa boyacense
This arepa is fortunately becoming more and more
popular. This has allowed it to be eaten in many regions other than Boyacá.
These arepas are made with wheat and corn flour. Inside they have a mixture
made with ground curd, brown sugar, salt and butter.
4. Arepa and egg
Also known as coastal arepas. Not many people dare to
do them because they have great technique. In addition to having coastal cheese
and meat inside, they add a raw egg to the precooked arepa and then fry it to
unite all the flavors inside.
5. Arepa valluna
These arepas are made with threshed corn, taking care
that it is not very soft. They will be roasted on the grill with butter, then
they are removed, grated cheese is put on them and they are roasted a little
more. They are simple but their preparation is essential to make them
delicious.
6. Arepa santandereana
Here the technique is very special to prepare these
arepas. They are made with yellow corn, the important thing is that it is
peeled with ashes dissolved in water. This gives it a very special and
different flavor to any other type of arepas. In some cases, the corn masa is
mixed with chicharrón, even more flavor.
